As Phood’s resident Texan, I’m going to tell you about the best day of the week: Taco Tuesday. In fact, ask most Texans and they’ll confirm that Taco Tuesday is, by far, the best day of the week. And even though it might not be Tuesday, there’s no reason why you can’t prepare for Taco Tuesday. Or even have an early celebration!
So here’s a recipe to make sure your Taco Tuesday (or Monday, or Saturday, or whatever day) is everything that you hope for and more. It’s also extra special because it’s an amazingly easy slow-cooker recipe. You can even prep and cook the veggies in advance, since they’ll be tossed into the slow-cooker later with the chicken anyway.
This recipe is very versatile and can be as complicated or simple as you choose with virtually any toppings that you might want. It can even be made gluten free by using corn tortillas.
