Taco Tuesday!

As Phood’s resident Texan, I’m going to tell you about the best day of the week: Taco Tuesday. In fact, ask most Texans and they’ll confirm that Taco Tuesday is, by far, the best day of the week. And even though it might not be Tuesday, there’s no reason why you can’t prepare for Taco Tuesday. Or even have an early celebration!

So here’s a recipe to make sure your Taco Tuesday (or Monday, or Saturday, or whatever day) is everything that you hope for and more. It’s also extra special because it’s an amazingly easy slow-cooker recipe. You can even prep and cook the veggies in advance, since they’ll be tossed into the slow-cooker later with the chicken anyway.

Slow Cooker Salsa Chicken Tacos

Makes 3-4 servings

Slow Cooker Ingredients

  • 2 boneless, skinless chicken breasts, halved
  • 1 container of salsa (~16 oz) – I use Giant’s Medium Southwestern
  • 1 can of corn (~15 oz)
  • 1 can of black beans (~15 oz)
  • 1/2 medium yellow onion
  • 1/2 medium green pepper
  • 1 tbsp of olive oil

Serving Ingredients

  • Lettuce
  • Shredded cheddar cheese
  • Sour cream
  • Tortillas or taco shells

Instructions:

1) Place halved breasts in slow cooker and smother with salsa.

2) Cook in slow cooker for 3-4 hours on high or 6-8 hours on low.

3) Julienne or dice onion and pepper, then saute in medium skillet with olive oil over medium heat.

4) When the slow cooker is done, turn to warm and shred chicken. Then stir in corn, beans, and sauteed onion and pepper and leave for a few minutes (or until warm).

5) Serve in a tortilla or taco shell, topping with lettuce, cheese, and sour cream.

This recipe is very versatile and can be as complicated or simple as you choose with virtually any toppings that you might want. It can even be made gluten free by using corn tortillas. Whichever way you do it, the bottom line is that this recipe
